FInnish Cabbage Over Rice


Adapted from ‘Sundays at Moosewood Restaurant’

1 medium onion or leek, chopped

2 tablespoons olive oil

4 cups shredded cabbage (about ½ medium head)

2 tablespoons tomato paste

1 tablespoon vinegar

1 tablespoon dried dill

1 teaspoon salt

½ teaspoon paprika

freshly ground black pepper

¼ cup water

Saute the onion in the olive oil in a large skillet.  When the onion is almost translucent, add the cabbage.  Sirring occasionally, sauté until the cabbage is somewhat reduced, about 5 minutes, but do not let the onion brown.  Combine the rest of the ingredients as a sauce and pour them over the cabbage.  Remove from heat.  Cover the skillet with foil or a lid and bake at 375 degrees for about 30 minutes.  Serve over rice, barley, mashed potatoes, egg noodles, or as a side dish.  Serves 4.
