Balsamic Vinaigrette


1/4 cup balsamic  balsamic vinegar ( I like to use whole foods 365)

1/4 cup canola oil

1/4 cup extra virgin olive oil

1 teaspoon chopped garlic (very fine)

1 teaspoon dijon mustard

2 teaspoon mild local honey

salt and black pepper  



Put garlic, balsamic vinegar, honey, mustard and pinch of salt in a large bowl.  Whisk until all of the ingredients are well combined.  If you have some fresh thyme or parsley in the refrigerator,  finely chopped one or both of these herbs and add a teaspoon to the vinaigrette. 

Whisk in the oils and finish with  black pepper.


 I love to serve this vinaigrette with salad greens topped with grilled red onions and  goat cheese.
